12oz self-raising flour
1 tsp baking powder
1/2 tsp salt
8 floz apple juice
4 floz vegetable oil
2 tsp vanilla essence
2 tsp vinegar
Mix together all of the dry ingredients in a large bowl.
Mix all of the wet ingredients together. Make a well in the bowl of dry ingredients and pour in the wet ingredients. Stir them together. Place into two cake tins.
Cook in a preheated 180 degree oven or gas mark 4 for30 minutes or until a knife comes out clean. Cool on a cooling rack.
To make a jam sponge cake put jam on one half of the cake and place the other half on top (put the two halfs together that came out of thebottom of the cake tin).
