New Potato Salad

Ingredients:
10 salad potatoes
1 romaine heart
cucumber
10 cherry tomatoes
red or orange pepper
vegan mayonnaise

Method:
Wash the potatoes and cut up so they are equal sizes. Put in a microwavable dish and add 3 tablespoons of water and microwave for 5 minutes or until soft. Otherwise boil in a pan for 10 minutes.
Finely shred the lettuce. Chop the cucumber into small squares. Halve the tomatoes. De-seed the pepper ad chop into small squares.
Combine all of the salad in a bowl and stir thoroughly. Serve with vegan mayonnaise.
