Cook the noodles as per the instructions on the packet and put aside. Melt two large knobs of margarine in a saucepan. Add pint of soya milk and 4 tablespoons of nutritional yeast. Stir the mixture until the yeast flakes have all dissolved. The sauce should be thickened and if it hasnt then add some cornflour a spoonful at a time.
Then add salt and pepper (and mustard if desired). Keep tasting the sauce at this stage and add the seasonings in the quantity that you desire. Once it is to your liking add in the noodles and stir gently and thoroughly until they are all coated in sauce. Serve with a vegetable stir fry or steamed green vegetables.
